Very First Blog


Hello! Here is my first official post of my own.

So, what is my first blog about? A recipe!! My own made up recipe!

I am known for this in my home as I am one of those women that gets tired of the same old foods every day, every week. When I was a child, my mom made the same things on a regular basis.  Now I don’t mean the same every day, but I mean she had those same easy meals that were easy to make when you got home from work, or in my case, easy meals I could have on the table and ready to go by the time my parents got home from work.  I have tried to follow in my mother’s footsteps, but no, I am one of those women who just can’t do this.  I am far from being organized like my mother and I am one who gets tired of the same 'ol meals.  I need variety as I am one of those ladies that can’t stick to a plan or a menu.  I am one of those women who has tried the meal planning thing, the menu planning and whatever else you can think of.  They work for a while for me and I feel great that I stuck to it for a few weeks, but then…I fall off the bandwagon and I am back to square one.  I have a hard time sticking to plans and I am one who has a hard time disciplining myself to stay focused.  I am one of those people in this world that is soooooo unorganized and so not put together.  Are any of you like this?  For almost 50 years I have been trying to get my life under control and organized, but it hasn’t happened yet.  I figure if it has not happened by now, it never will!!  Even this post is all over the place.  Oh friends, be prepared.  This is what my front porch is going to be like.  Real life.    
Anyways, what recipe do I want to share with you today that I just threw together?

“Chicken Pineapple Teriyaki Sausage & Turkey Tacos or Nachos”
 
Here is the story to go with how this recipe came about.

My son and I were at the meat market a few weeks ago getting some chicken and while waiting for the meatman, my son saw Chicken Pineapple Teriyaki sausage. He says to me, “mom, we should get some of this and try it,” and me being the type of mom I am, “sure.”  I told him we could use it in the morning with breakfast.  I purchase a little over a pound of it.  Take it home, put it in my fridge & forget to make it the next morning (nothing new for me). I see it later in the day and think to myself, “oh man, I need to use this sausage before it goes bad.”  Trying to figure out what I am making for a dinner and being on a budget, I look in the fridge and see this sausage again.  I start looking in my freezer to see what I can put with it.  I see some frozen ground turkey and I take it out to thaw.  Then I am thinking, “what else can I do?”  AhHah!!  Let’s mix these two together and make tacos with it!!  So, I run to the store to purchase taco seasoning, shells, cheese, sour cream & shreds.  I also purchase yellow rice as my family loves yellow rice with our tacos & I decided to pick up a bag of nachos that our store makes fresh as I am thinking that they could make nachos if they do not want tacos.  I get home and start making my “cool dinner” I came up with. I tell everyone that dinner is ready.  I leave for work telling them I will eat when I get home.  When I got home, all my kids were like, “Mom, what did you do to this taco meat?  It was so good!!  Don’t change it and make this again!”  Even my husband, who by the way I did not tell him what type of meat I used as he hates sausage, told me he loved it and to make it again (what he does not know will not kill him).
I decided since my family loved this recipe and I loved it, it would be a great way to start out my blogging page.  So, I hope you and your family will enjoy this recipe as well.  If you try it, leave a comment below and tell me what happened with your family.

“Chicken Pineapple Teriyaki Sausage & Turkey Tacos or Nachos”

INGREDIENTS


  • 1.25 lb. Chicken Pineapple Teriyaki Sausage
  • 3/4 -1lb. Ground Turkey 
  • 2 bags Mahatma Yellow Rice
  • 8 oz. Kraft Mexican Four Cheese
  • Rojos Homestyle Salsa (or your favorite brand)
  • Sour Cream
  • Shreds or shredded lettuce
  • Your choice of taco shells or Nachos

INSTRUCTIONS

1.  Start preparing the Yellow Rice according to package directions.
2.  Preheat nonstick skillet on medium heat and cook your sausage & ground turkey till no longer raw (about 5-10 minutes).  I put a little water in the bottom of my pan as I use a skillet that is not nonstick. 



That's it!!!  Nothing else!  It is SO SIMPLE!!  Now all you need to do is let your family build there tacos or nachos with the above listed ingredients to their liking.  As for me, I love to make nachos with it.  Here is how I make my nachos as that is what I love to make with this mixture.
              - Nachos 1st
              - Meat mixture
              - Rice
              - Cheese
              - Shreds
              - Dollop of sour cream & salsa
